Pineapple Bake

Here’s another quick, easy, and tasty recipe that I thought I had already posted. My grandmother used to make this, and even tho I’m not a huge fan of pineapple, I think this is yummy. And if you like bread pudding, you’ll love this!

Pineapple Bake

8 slices day-old bread, torn in chunks
1 20-oz. can crushed pineapple, drained

Mix this together and spread in a 9″ x 9″ buttered baking dish.

4 eggs
1/2 cup butter, melted
3/4 cup brown sugar

Beat eggs till light and fluffy. Beat in butter and brown sugar. Pour over bread mixture. Bake 40 minutes at 375 degrees till puffed and golden. Serve warm. Mmmm… Mmmmm…. good!

And so easy! Is it bad that I like to eat this for breakfast?

    I’ll have to try this one. We love pineapple upside down cake and also bread pudding….seems to be a combo of the two. Thanks for sharing!

    This looks like something I would like. Easy and I love bread pudding. Plus, there are those hot dog buns in the freezer I didn’t know what to do with. lol Thank you, Shelly!

      Well, I started out to make this. Tore up the buns (they were slider buns – 8). Mixed it with the drained pineapple, whipped the eggs….hmm, that’s a lot of bread. Added another egg, hmmm I better add a little milk cause that’s a lot of bun chunks there. Oh. My. Was that ever good!!!! YUMMY!!

  12. Oh thank you. Just what I needed; the perfect recipe to help me add to the 30 plus pounds I have gained in the past year after 3 surgeries and Covid 19! I just happen to have everything needed so I guess I’m off to the kitchen to make some yummy comfort food!
