Sweet Potato Casserole

Here’s another good Thanksgiving Dinner recipe, just in time for Thanksgiving . . .

My grandmother used to make this all the time, even when it wasn’t Thanksgiving. She got the recipe from her daughter-in-law, who used to run a Bed & Breakfast, so you know it’s good — I’ve never met a Bed & Breakfast recipe I didn’t like!

Sweet Potato Casserole

3 cups cooked mashed sweet potatoes
1/2 cup white sugar
1/4 cup milk
1/3 cup butter, melted
2 beaten eggs
1 teaspoon vanilla

For the topping:
1 cup flaked coconut
1 cup brown sugar
1/3 cup flour
1/3 cup butter, melted
1 cup chopped pecans

Combine potatoes, sugar, milk, butter (1/3 cup), eggs, and vanilla.
Mix well — put in greased 8″-square baking dish.

Combine coconut, brown sugar, flour, remaining 1/3 cup butter, and nuts into a crumbly mixture.
Spread on top of the sweet potato mixture.

Bake at 375 degrees for 25 minutes, or until browned on top.

Grandma usually doubled this recipe, and made it in a 9″ x 13″ pan. She was also known to make extra of the topping, or make the topping ahead of time, and keep it in a jar in the freezer to save herself time later on. She was so organized. I am so not.

    That sounds good. Mark is allergic to nuts so I would have to omit those. Hope you have a wonderful Thanksgiving!

    Happy thanksgiving to all. And may we all be grateful for where we live , the food on the table and the warmth of family and friends. Please also pray for those who don’t. It’s terrible to be alone on a holiday.

    That sounds like a great recipe. I should have read this before I started my candied sweet potatoes!
