Porcupine Meatball Supper

Posted on March 1, 2010 by prairiemoonquilts in Recipes

This recipe is from my mother’s recipe box. A good old standby main dish.

1 pound ground beef

1/2 cup uncooked white rice

1 tsp. salt

1/4 cup chopped onion

1/4 cup chopped green pepper

1 beaten egg

1/2 tsp. paprika

1/2 tsp. black pepper

3 tbsps. butter

2 cups tomato juice

4-5 small potatoes, peeled and quartered

4-5 carrots, peeled and chunked up

Mix the first 8 ingredients together and form into balls. Melt the butter in a skillet over medium heat. Place the meatballs in the skillet and brown on all sides.

When the meatballs are browned, fit the potato and carrot pieces down in around the meatballs, and pour the tomato juice over the whole thing. Cover and simmer on low heat for 25-30 minutes or until the vegetables and rice are cooked through.

The same as I make , with a few changes. A recipe from Mom Smith. A favorite of our family. I cook a lot of it & put in big roaster & cook in oven.
