Miracle Cake

When I mentioned making this cake a few posts ago, I couldn’t believe that I didn’t already have the recipe posted — it’s so easy and fast. It’s a good one for when you want something easy in a hurry. And simple ingredients that you probably always have on hand (or should).

And it’s chocolate . . . what more could you want?

Miracle Cake

2 cups flour
1 cup sugar
1/2 cup cocoa
2 teaspoons baking soda
1 cup cold water
2 teaspoons vanilla
1 cup Miracle Whip

Mix all dry ingredients, then add water and vanilla; mix well.
Add Miracle Whip and beat.
Pour into a greased 9″ x9″ baking pan.
Bake at 350 degrees for 30-35 minutes.

I don’t even make frosting for this cake. It’s best with either ice cream or whipped cream on top!

You can also use mayonnaise instead of Miracle Whip, whichever you happen to have on hand.

And it’ll truly be a miracle if it lasts very long — even with just the two of us around here, it disappears pretty fast. And I’m not too proud to admit that I’ve eaten it for breakfast occasionally!

    How fun to see this! The Miracle Cake was a popular ‘snack’ cake among the mom’s in my neighborhood back in the 50’s/60’s. And it’s the Miracle Whip that makes the difference – no real mayonnaise substitute!

  3. I need to try this one! I have a cookie recipe from many years ago that uses Miracle Whip and a chocolate cake mix. Five ingredients, it’s so fast….instant gratification, if you don’t mind the cake mix. Yours is more of a scratch recipe for more discriminating bakers 🙂

    Remember the play that Kay and I did where we pretended to be quilters from down in Florida who would tell MO and IL quilters how to save time in the kitchen? We actually baked this cake and served it over in Quincy. I got this recipe years ago from my deceased aunt down in Oklahoma. I was just a grade-schooler when I made it the first time. Made me remember some real fun times.

    I remember when my mother and my aunts were first hearing of this cake. ‘Never heard of such a thing’. My mom would say, ‘But it has the eggs and oil already in it’. It didn’t matter to me it was yummy and never dry.
