Hodge Podge

I haven’t published a recipe in a coon’s age. I think it’s because I’ve been too busy trying new ones of everyone else’s!

But I have a quilting party to go to later tonight, and it’s a potluck with a theme, and the theme this time is Soup & Sandwiches, so I decided to make an old standby of my grandmother’s — Hodge Podge.

I’ve been running around like a chicken with my head cut off all day so far — appointments, errands, grocery shopping, chores, etc. — and I still had time to make this with a minimum of effort and fuss.

Here’s what you need to make it:

1 1/2 pounds ground beef

1 small onion, chopped

3 cans condensed minestrone soup

1 31-oz. can Pork ‘n’ Beans

1 1/2 cups chopped celery

3 cups water

1 Tablespoon Worchestershire sauce

1/2 teaspoon dried crushed oregano

Here’s how you make it:

Brown the ground beef and onion together in a large pot. Drain, if necessary, and add the rest of the ingredients. Simmer for about 20 minutes. Can it get any easier than that? I think not!

I dished up a bowl to leave at home so My Cowboy could have some supper while I’m gone, and I’m planning to just transfer the rest of it into my crockpot for keeping it warm at the party.

Now to gather up those UFOs I’m planning on working on at the party . . .

    Uh, I guess I am a bit dim. I had to read this on the blog and on facebook before it dawned on me that HodgePodge is the name of the recipe. I have a sorta similar recipe from Patrick’s grandmother. I can’t remember what she called it but I make it anyway. I guess I should name it something and write it down for my kids. Someday they will want to know.

    This is a really good recipe, very similar to one of our family favorites for cooking over an open campfire. I haven’t made it for awhile, but I will get it out again for the grandkids when they get a little older. Makes my mouth water to think of it!
