Gingersnaps

I’ve been making these cookies since I was old enough to make cookies. My brothers love them. They’re a fine departure from plain ol’ chocolate chip cookies — wonderful for when you get that hankerin’ for somethin’ different!

1 cup molasses
1 cup sugar
1 cup shortening
2 eggs
1 tablespoon baking soda
2 tablespoons ground ginger
4 cups flour, sifted

Mix in the order given, and roll into balls about 1″ in diameter. Place the balls on a greased cookie sheet and bake at 400 degrees for about 10 minutes.

Optionally, you can roll the balls in sugar before baking. If you want chewier cookies, bake them for a shorter time. If you like your gingersnaps crisp, bake them a tidget longer.
