Peach Bombs

I can never let peach season go by without making these at least once. This heavenly recipe came from a little place in St. Charles, Missouri, called Miss Aimee B’s, that sadly, is not open any more. Miss Aimee B’s published a cookbook of their best recipes, and after trying this delectable concoction at their little establishment one time, I looked it up in their cookbook so I could create it myself at home, since I couldn’t just go to Miss Aimee B’s whenever I felt the urge to have one (which is more often than it should be).

The secret is all in the sauce! It’s entirely magical.

It might be illegal for me to post this recipe, so if someone complains, I’ll take it down, but I’ve also seen it posted other places, so for now, I’m posting my version. Simply because . . . if you like peaches, you will LOVE this, and it needs to be shared!

My Neighbor’s Peach Bombs

one recipe Pie Crust (you can find my recipe for Pie Crust HERE)

4 large (or 6 small) peaches, washed and dried

1 stick butter, melted
1 1/2 cups powdered sugar
1 tablespoon almond extract
1 beaten egg

Preheat oven to 350 degrees. Divide pie crust into 6 equal portions. Roll out one portion and wrap it around a peach to completely cover the peach. Repeat for the other 5 peaches.

Place the dough-covered peaches in an ungreased baking dish and bake 45 minutes or until crust is golden.

While the peach bombs are baking, make the special magical sauce:

Beat one egg until smooth.

In a small saucepan, melt the butter. Add the powdered sugar, almond extract, and the beaten egg. Cook over low heat until smooth, stirring constantly. Set aside.

To serve, place one baked peach bomb in a bowl and pour sauce over the top. Put on a dollop of whipped cream, if you want. Or serve them with ice cream and a little extra sauce.

These seriously make my eyes roll back in my head, they’re so good!

    That sure does sound delicious! I was so sad to learn that Miss Aimee B’s had closed. It was such a quaint and delightful place to eat!

      I try it and it wasn’t that good tasting. I don’t know if the pit adds flavor or not it just don’t taste as good.

    Just what I needed. Sadly my husband passed suddenly last week. He loved anything having to do with peaches. A friend just dropped some peaches off at my door! I will be whipping this up for my visitors.

    I was curious about whether you peel and pit the peach, so I googled Peach Bomb. I found the recipe 3 other places including the Columbia Tribune and the St. Louis Post Dispatch, so I think you’re more than safe to post the recipe on your blog. I’m trying it tomorrow!

    I don’t have any problems with the recipe. I try it and it was great. I just tried to make it without the pit, and My mother and I don’t like the taste of it. So if I make it I leave the pit in.
