Amish Baked Oatmeal

I have a lot of Amish friends, and I’ve never seen them eating this, but that doesn’t mean they don’t. All I know is my kids liked it. Chances are, yours will, too. It’s a great breakfast for a cold morning when they have to head out to school.

1 1/2 cups quick-cooking oats

1/2 cup sugar

1/2 cup milk

1/4 cup butter, melted

1 egg

1 tsp. baking powder

1/2 tsp. salt

1 tsp. vanilla

Combine all the ingredients, and mix well.

Spread evenly in a greased 9″ x 13″ baking dish. Bake at 350 degrees for 25-30 minutes or until the edges are browned. Serve warm with milk, and topped with brown sugar, fruit, or nuts, if you like.
