Pumpkin Cookies

This is my sister’s recipe. These are her son’s favorite cookies, so she makes them for him whenever he visits home. They’re wonderfully moist and flavorful. I can see why he likes them.

1/2 cup butter
1/2 cup shortening
1 cup sugar
1 cup canned pumpkin
1 egg
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup chopped nuts (optional)

Cream together butter, shortening, sugar, and pumpkin in a mixing bowl. Beat in egg.

Sift together flour, baking soda, cinnamon, and salt; gradually add to pumpkin mixture. Fold in nuts.

Drop by spoonfuls onto cookie sheet, and bake at 350 degrees for 15 minutes.
