Today I thought I’d share with you a dish My Cowboy loves for breakfast. Actually, we like it any time, but My Cowboy eats this for breakfast with a slice of fresh-baked cornbread that I bake in my iron skillet. Keeps his belly full and warm while he’s outside doing what cowboys do.

Prairie Berries

Cook 1 cup of navy beans according to package directions and drain.

Cook 8 slices of bacon, and crumble. Reserve 2 Tbsps. of the grease to use later. In the remaining bacon grease, saute 1/2 cup chopped onion.

Mix together the beans, bacon grease, crumbled bacon, and onion. Add 1 Tbsp. Worchestershire sauce, 1 clove garlic (minced), 1 small can chili sauce, 1/2 tsp. chili powder, and 1 cup shredded cheddar cheese. (I sprinkle a bit more cheddar on top before baking it, too.)

Bake in a small greased casserole dish at 350 degrees for 20-25 minutes.
