Butter Pecan Cookies

These are hands-down my favorite cookies on the planet. The recipe comes from my friend and fellow guild member, Stephanie.

Stephanie comes from an entire family of wonderful cooks. Her sister even owns a restaurant!

Every time we have a guild retreat, Stephanie brings these cookies. I think I eat half of them all by myself. I know there are never any left, and they’re usually the first thing to be all gone. I have my sister hooked on them now, too.

Stephanie was kind enough to write off the recipe for me, and I’m sharing it here with you. It’s gonna become your favorite cookie, too. I just know it!

Butter Pecan Cookies

1 cup softened butter
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup coarsely chopped pecans

Cream butter and sugar.
Beat in eggs and vanilla.
Mix dry ingredients and blend into egg mixture.
Stir in nuts.
Drop by big teaspoons onto an ungreased cookie sheet.
Bake at 375 degrees for 10-12 minutes.

Stephanie says she makes her dough ahead of time, chills it, then shapes the dough into balls and places them on the cookie sheet.

I’m sure these cookies will not foil any of your weight-loss efforts . . . eat as many as you like! (Teehee!) Enjoy!
